Freezer Challenge Day #8

Alright ladies the back of my freezer is being to show!!!

Today I'm not sure what to make - I have out ground beef. I was thinking of doing something with that and mushrooms, maybe a stroganoff of some sorts. Or mini meatballs in gravy - have to think about this one - any suggestions? I have broccoli, spinach and most of the staples.

Found these online...have not tried them...

GROUND BEEF - BROCCOLI RICE CASSEROLE  

 

1 pkg. (10 oz.) broccoli frozen, chopped
1/3 c. chopped onions
1 c. cooked rice
1 can cream of mushroom soup
2 eggs (beaten)
1/2 c. mayonnaise
1 soup can of water
1/2 c. sliced mushroom
2 lb. ground beef, browned and drained
1 c. Cheddar cheese, grated

 

Cook broccoli and onions according to direction and drained mix together. The next seven ingredients add broccoli and onions to the mixture and stir. Pour into a 9 x 13 inch baking dish. Add cheese on the top. Bake at 350 degrees for 1 hour. Serves 4 to 6.

Mmmmm make Italian Wedding Soup - it's my favorite! Then send me some! Haha!

Stroganoff sounds yummy though too! I took out ground beef too. I'm making mini-meatloaf. What I'm making with it? Who knows!

mmm if it wasn't going to be 85 degrees I would so make soup! lol I also make a really good "cheeseburger" soup. It is like french onion soup with mini meatballs in it.

meat loaf sounds good too -with mac and cheese! lol

Believe it or not, at this time of year, I make meatloaf on the grill! Now that I am thinking about it, I can't stop LOL I think that is what I will be making for dinner tonight!
