OK so I have a few friends that are expecting and due this fall/winter. I would like to prep some meals for them to put in the freezer and give them some ideas of things they can get ready for themselves. Any ideas of casseroles / dinners that will freeze well for say 2-3 months?? OH and reheat super easily?

Thanks ladies!

Liz

PS - I was thinking things like mac and cheese, meatloaf, meatballs, baggies of taco meat, soups

I do lasagne and other pasta dishes a lot for me....also, enchiladas, chilli

Also, have you ever tried Dinner A'fare or Super Suppers...they can be a little pricey but you prep like 6 meals frozen and they are so easy...

For the winter any kind of soup/stew. Chicken veggie, beef stew, Mexican soup, chilli, veggie soup, etc. Things with potatoes don't freeze well. King Ranch Chicken Casserole Freezes well.

Also, I have a gf that was on bed rest during pregnancy. So, one weekend a month I made up pasta sauce for them.  I froze four containers of spaghetti sauce so they could just pull one out a week and make spaghetti, ziti, or turn it into goolash. They loved that because it wasn't lasagna every week but her hubby or a family member could just pull it out and then just use it for whatever.

And oh..how about that turkey in your freezer? Cook it up and make TV dinners...or make a ham and make little packs of it.....

you are so sweet to do this!

Soups were great for the first couple of months.  We had frozen them in quart containers that DH had gotten at a restaurant supply store near you in P'burg.  They could easily be reheated.  I like the idea of the baggies of taco meat, or even some chicken breast cut in strips.  Those things can easily be tossed in with something else and "ta-da" dinner is done.  I rarely ate a hot meal for the first two months.  Usually when I sat to eat dinner, the baby would need my attention so I would make things that were ok tasting at room temp or reheated.

When i was pregnant with Lola I did this about 3 weeks before my c section. I think that is a great idea!!

I did lots of soups, home chikcen noodle, beef stew. I also made homemade sauce and froze it. I also cooked off ground beef for spagetthi, sloppy joes and shepards pie. It cut down on prep time for meals.

the best part for me was I had a c section and it was so easy to pop stuff in the microwave the last thing i wanted to do was stand around 4 days after a csection and cook a full meal.
