Freezer Challenge - Day #5

So how's the freezer 'eating thru' going for everyone??

I forgot to take something out last night so here it is winging in based on what will defrost quickly! lol

Shrimp Scampi with Zucchini

Freezer:
shrimp
fresh pasta (for hubby)

Pantry
spices

Fresh
lemon juice
garlic
onion
zucchini

I have my cooking class over the weekend so I'll also be taking out more shrimp, a big pack of chicken breasts, cool whip, a frozen pie shell and some frozen fruit! I can see the back of the freezer upstairs in spots! lol GREAT feeling!

I'm working an extra shift tonight so no cooking for me!  I will be taking Tilapia, Shrimp, and Chicken out of the freezer for the weekend though. I'll let you know what I make.  Thanks for posting this.  I have three freezers that I need to clean out.

Running late this morning. I took out steaks and im gonna make something with them

I also have some fresh mushrooms and chimicurri sp?

Well I defrosted my freezer yesterday (which was the whole reason we are doing this!) and I went nutso organizing and now have a list of meat contents posted on the fron of the freezer!

So for today - because there is still stuff that needs to be eaten to clear out the "old":

Freezer
Meatballs (I prefer to make my own but this is the bagged kind)

Pantry
Spaghetti sauce
noodles/sub buns (choose how you eat the meatballs is the plan-ie spaghetti or subs or just meatballs)

Nice easy way to start the weekend thanks to the crock pot :)

I had a bag of brussel sprouts in the freezer.    So I took out some chicken breasts and I will do something with the brussel sprouts as well.  

I am thinking about making a risotto, but with orzo pasta.  Tossing in the chicken with some lemon, garlic, spices, etc.

I haven't decided if I am going to toss in the brussel sprouts directly to the pasta or roast them in the oven separately.  I will probably roast them with a balsamic glaze or something along those lines.  

Freezer:  Chicken breasts, brussel sprouts

Fresh: Butter, lemons, garlic, possibly bacon to go with the roasted brussel sprouts

Pantry:  Orzo, chicken broth, flour, balsamic, olive oil, spices,

I feel a drop better, but not much.  I still have no voice and a terrible hacking cough, but I can deal.  My fever is gone so I'll cook through the rest of it. 

The things I will do for a good meal.
