Freezer Challenge - Day 3
So ladies - what's on the menu today from the freezer???
My plan - veal parm
FREEZER:
breaded veal patties
PANTRY:
crushed tomatoes
tomato paste
salt & pepper
salad dressing
FRESH:
garlic
organo - from the garden
mozzarella cheese
parmesan cheese
salad fixins
I went through the freezer upstars last night and organized and cleaned out some stuff. I have to remember to label leftovers before I put them in there - or just not put them in because we never thaw and eat them! I also realized that I had a lot of "junk food" in my freezer, I buy it - eat one serving and it sits in there! i.e. french fries, hash browns, veal patties (the breaded kind) etc! I am using this stuff up first and feeding it all to hubby! lol
Don't forget to take something out later for tomorrow too!

Today is my husbands Birthday so I was supposed to be cooking his meal of choice. However, he felt bad because I'm still extremely sick so he told me to hold off until the weekend.
So I'm making something easy tonight instead (although his meal that he wanted was really easy, lol) Spaghetti and meatballs.
Freezer: Ground chuck
Fridge: Fresh mozzarella
Pantry: Rao's marinara (I normally make my own, but I'm cheating), garlic, onions, breadcrumbs, various spices, olive oil, and pasta

I had gotten some frozen bean and beef borritos in my Angel Box this month. We dont really eat those but hey gotta love those Angel Boxes! So here is what I am gonna make up!
Freezer-Bean and Beefr Borritos
Fridge-Shreeded Monterey Jack Cheese
Pantry-Can whole corn drained
Can of Stewed Tomatos
Cayene
Garlic Powder
Mix Pantry stuff together and arrange borritos in casserole dish pour mixture over. Bake about 30 min then add cheese on top.
Can't be that bad. lol lol

Baked Chicken with Rice & Bell Peppers
Cooked the chicken last night so I wouldn't have to heat up the kitchen tonight (it's 102 today)... After workout...
Once home, will cook rice in the rice cooker and cut up the prettiest yellow, orange and red bell peppers. I love them plain, but will probably add a little italian dressing for the family.
Yummy!
Still thinking about tomorrow, but I'm leaning towards leftover rice with the pinto beans I cooked Sunday....
