I just made the most EPIC baked beans and they are soooooo low sodium that even a post plastics person can eat some! And they are rich in fiber to keep you moving with those pain meds on board.

Ingredients:

Great Northern Beans (dried 1lb)
1 cup water
1/3 cup Mollasses (Im guessing I didn't measure...)
1/4 cup brown sugar splenda
1 tsp mustard powder
Garlic and Onion powder - till it smells good! LOL!
1 chopped yellow onion
1/2lb Turkey Bacon.

Throw it all in a crock (after you have soaked the beans over night - this not only gets them ready for cooking - but supposedly it gets the stuff that causes some of the gassyness out - though I dont believe it! LOL!)
Let it sit on high for 6-8 hours.

Hope yall enjoy! I am learning slowly but surely how to keep sodium (added sodium anyway) out of my diet. Even 5 mths out I still swell like crazy (up to 10 lbs at times) when I get ahold of sodium. If you are interested I would be happy to post my recipes for salt free katchup, mustard and barbeque sauce (you would be amazed at the amount of salt in our condiments!)

Great recipe! I'm definitely always looking for low sodium recipes. I have also cut out all added salt and try to stick to less than 1500 mgs a day of sodium. It really keeps the swell at bay. Thanks!
