Help with healthy recipes
Since I must decarb yet again, I was wondering if anyone had any good recipes for veggies or fruits or anything clean without carbs. I will share one of my favorites which is carmel apple salad.
Carmel Apple Salad
8 oz. tub of Cool Whip Lite or Free
1 (1 oz) box of SF instant butterscotch pudding mix
14 oz. can of pineapple tidbits in own juice
8 large apples (any kind you like)
Combine pudding mix and pineapple (with the juice) in a large bowl. Mix well and set aside. Dice apples into small pieces and combine with pudding mixture. Fold in cool whip till well mixed. Chill and serve.
Makes 16 servings and has 90 calories per serving. Can also use vanilla sugar free pudding but does not taste like carmel. I make half the batch as it only lasts about 2-3 days in the refrigerator.
