Low Carb Cream of Celery Soup
Cream of Celery Soup:

Serves 2
1 14-oz can chicken broth
3 stalks celery, diced
2 oz light cream
1/4 teaspoon salt & pepper
1/8 teaspoon garlic powder
Pull strings off the back of the celery stalks with a small sharp knife and dice. You may prefer to leave them on for texture in the soup.
Treat a nonstick saucepan with cooking spray. Saute celery until softened. Mix all ingredients in the blender then return to saucepan. Cook on medium heat until simmering. Check for seasonings and serve!
