Really flavorful Chicken Soup

Ingredients:

1 Store bought Pre-cooked 3# Rotissere Chicken (separate the dark meat from the white and reserve dark meat for another use) Chop the meat into bite sized pieces.

2 Medium Onions Chopped

4 Stalks Celery Chopped

4 Carrots Chopped

1 32 oz. Box low sodium, low or no fat Chicken Broth

1 32 oz. Box Vegetable Broth

32 oz. Tap Water

1 10 oz. Box Frozen Spinach

1 Cup Dry White Northern Beans

Parsley, Basil, Dill, Salt, Pepper to taste

 

Directions:

In a large stock pot place the chicken broth, vegetable broth and water.  Add the the skin and bones of the chicken and loosely cover pot over medium high heat for 1 hour.

Drain broth out of pot to a refrigeratable container.  Toss bones and skin.  As the broth cools the fats will accumulate on the surface.  Periodically skim the soup until completely defatted.

Using the stock pot, saute the onion, carrot and celery until soft.  Add the liquid back to the pot and bring to a boil.  Add the spinach, beans and spices.  Coo****il the beans are tender. 

Add the bite sized pieces of white meat chicken to the pot.

Enjoy the aroma and the concentrated flavor of this delicious soup.
