The great Tilapia Race
As suggested by Nicole in the roll call post, I am looking for great tilapia recipes.
I have 20 lbs of it that I did not get to use for Siehara's Bat Mitzvah party and it will not keep til spring when we reschedule the party.
So.... get your recipes together and share them with me, please.

Parmesan Crusted Salmon or Tilapia
1/2 C grated parmesan cheese
1/3 C butter, softened
2 T mayo
2 scallions, thinly sliced
4 filets of fish
1 lemon
ground pepper
combine 1st 4 ingredients
lightly butter baking pan and lay out fish, sprinkle w lemon juice and pepper
broil 10 min (salmon) 5 min (tilapia)
remove from oven. spread mixture over fish and return to oven for 2 minutes till brown & bubbly.]
Tilapia Fish Tacos

Ingredients
- 4 oz Tilapia filet
taco seasoning
olive oil spray
lime
for condiments:
Avocado
salsa
nonfat sour cream
lettuce
low fat cheese
2 corn tortillas
Directions
place tilapia filet on a piece of aluminum foil place on a cookie sheet. Spray lightly with olive oil spray. Sprinkle taco seasoning on the filet. Slice lime, and place lime slices over the filet. Cover with foil, as if to make a package. Place in a preheated 325 degree oven for about 20-25 minutes.After tilapia is cooked through, open up foil packet, discard lime, and enjoy the fish with you favorite taco ingredients!
