Mediterranean Baked Tilapia

Ingredients:

Serves 4

4 5-oz white fish fillets (bass, tilapia, flounder, trout)

1 1/2 Roma tomatoes

4 baby carrots

1/4 cup sliced mushrooms

2 cloves garlic

6 medium green stuffed olives

2 tablespoon capers, drained

1 oz white wine (optional)

juice of 1/2 lemon

salt & pepper to taste

Cooking Instructions:

The combination of flavors is wonderful. A restaurant quality meal easily made at home.

Preheat oven to 350 F. Treat a casserole dish with cooking spray.

Gather all ingredients except the fish, lemon juice and wine. Chop everything into small pieces as if you were making a salsa. Place in a bowl and refrigerate for an hour or so to combine the flavors.

Place fish in the casserole dish. Spray a few spritzes of "I Can't Believe It's Not Butter" Light spray over the fish. Season with salt and pepper. Spoon the "salsa" & wine over the fish.

Cover tightly with foil and bake for 30 min or until fish flakes easily with a fork. Remove from over and uncover. Let sit for a few minutes. Squeeze lemon juice over fish and serve!

Tip: This is nice with a small green salad on the side. To make it family friendly, serve on a bed of rice or orzo along with the salad. For a 0 carb meal, don't eat the "salsa" and skip the salad.

For easier clean up, place fish in a foil bag or before cooking.
