Wednesday's eats
3 days this week.. mostly on schedule.. Yesterday I had a bit of an issue later on b/c we were not home at dinner time. I ended up with a protein bar and then ate cocopops w/ cashew butter later.. I paid the price for the cashew butter.. I don't know if it was bad or if I didn't mix it enough, but it did not agree with my pouchie and I ended up drinking mint tea and going to bed.

they were made at a cooking class at some point. Here is the recipe:
1 lb ground chicken
2 garlic cloves; grated ( I just used garlic garlic)
salt and pepper
2 TBSP butter
1/2 small onion, grated
1/2 C parsley, chopped
EVOO for drizzling
1/2 C hot sauce
preheat oven to 400. In large bowl, combine chicken w/onion, garlic and parsley and season w/ salt and pepper. Shape into balls. Arrange on non-stick sheet pan and drizzle with EVOO. Place in oven and bake until cooked through and golden brown, about 10-12 minutes. While baking, melt the butter. Add the hot sauce and whisk to combine. Toss the meatballs in the hot sauce to coat or serve on the side.
