Ingredients:

Serves 10

5 red bell peppers, seeded & cut into quarters

2 green onions, chopped

1 lb cooked crabmeat, flaked

32 oz carton chicken broth

1 cup grated parmesan cheese

3/4 cup light cream

1 teaspoon each salt & pepper

3/4 teaspoon garlic powder

1/2 teaspoon dried basil

1/4 teaspoon cayenne pepper

Cooking Instructions:

Set the oven to broil, and preheat for 5 minutes.

Place the red bell pepper quarters skin side up on a broiler pan or baking sheet. Broil until skins have blackened then place them in a covered bowl and let them to steam for 10 minutes to loosen the skins.

Once skins are loose peel them off and discard. Coarsely chop and place into a large saucepan with chicken broth and zucchini. Bring to a boil over high heat then add cream, salt, cayenne pepper, garlic powder and basil. Return to a boil, reduce heat to medium and simmer 45 minutes.

Puree soup with an immersion blender until smooth. Pour soup into another saucepan and stir in crab. Heat over medium heat to warm through; about 5 minutes. Check seasonings & serve hot!
