Do you miss Chowder?

Ingredients:
Serves 8
2 lbs cod or any firm white fish, cut in 2" pieces
2 cups clam juice
1 cup light cream
1/2 cup dry white wine
1 medium onion, diced
1 medium carrot, diced
1 stalk celery
1 cup sliced mushrooms
2 tablespoons chopped fresh parsley
1 tablespoon I Can't Believe It's Not Butter Light
1 teaspoon Old Bay seasoning
1 teaspoon dried thyme
1 teaspoon salt
1/4 teaspoon freshly ground black pepper
Cooking Instructions:Heat oil and butter in the bottom of a large stockpot on medium heat.
Add onions, celery & carrots and cook about 5 minutes. Add wine, turn heat to high and cook uncovered until the wine reduces by half.
Add clam juice, thyme, salt, pepper and Old Bay spice. Lower the heat to medium and simmer about 10-15 minutes.
Add fish, mushrooms and cream, cooking on low heat about 10 minutes. Don't let it boil or the cream will curdle. When the fish is just cooked through, remove from heat. Mix in the parsley.
Tip: Flavor improves if you let it sit 20-30 minutes. Freezes great!
