I simmer salsa, taco seasoning, shredded cheese, beans and meat. Then you just dump it on top of fritos, doritos, or tortilla chips.
I will be using left over Chicken tonight, but I've made it with pork and ground beef too. It's just a "One pot" way of making tacos. Quick, easy, yummy, and a cheap way to use up left over meats.

It's also really good with Mexi-Corn mixed in but I am skipping that tonight to keep the carb count lower for me. You can add anything you want. I am using some homemade jarred Salsa my neice made over the summer and that tastes WAY better than the store stuff.

M1: Protein shake (strawberries and banana)
M2: Fresh pineapple and half whole wheat bagel (my first since surgery!)
M3: Chili (homemade) with greek yogurt and lowfat cheese
M4: Apple and cheese stick
M5: Vegetarian chicken with goat cheese and cranberries (probably - possibly a salmon filet instead)
M6: Homemade SF/LF pumpkin pie (made it last night! so excited!)
