Back to the Basics - Menu for Monday
OK So lets start this week out on the right foot - here's my plan
B: oatmeal custard
S: banana with peanut butter
L: chicken soup with mini meatballs and lots of veggies
S: hummus with celery
D: not sure eating at my MOm's but some kind of meat and veggies
S: S/F Chocolate pudding with peanut butter
LOTS of water and non-caffinated beverages. Switching to herbal tea in the morning unless it's a rough night and I really need coffee! lol

This is all I did for this one. There are a lot of variations on Eggface's blog.

1 lb part-skim ricotta
1 cup of 2% shredded cheese (any kind you want! I used mozzarella in one, and Italian blend in another)
4 to 8 oz of meat (I used deli sliced ham)
2 eggs
Mix all ingredients with a big spoon, not the hand mixer. Pour into a greased baking dish or pie plate. Bake at 350 for 30 minutes. (I used muffin tin)
