Food Prep for Getting Back to Basics!

So today I'll be spending hours in the kitchen getting ready for the week. I am making Chris a big pot of split pea soup, for me some chicken soup, poached chicken for salad, mixing and freezing hamburgers, slicing cheese, making hummus, making mini crustless quiches, pudding and rolling up some more turkey for snacks.

What are you doing to prep?

I am hoping to do some food prep today.  I took chicken and ground turkey out of the fridge in the hopes of making spinach chicken bake and cheeseburger pie.  The way I'm feeling, though, it may not happen.

I AM going to put the chicken into a crock pot with tomatoes and stuff so at least that is cooked with little work from me.  Then, if I feel like turning it into spinach chicken bake I can.  If not, it's already cooked for eating.

so, in between coughing, sneezing and blowing my nose I have chicken in the crock pot, cheesy egg bites done and cheeseburger pie in the oven.  Not too shabby if I do say so myself. 

I also made myself some dippy eggs to eat with an Arnold's sandwich round.  I was hungry.. 

Once the cheeseburger pie is done, I'm going to stop for the day.  I really do need to get some rest so I can sit in one spot and use my brain for at least 8 hours tomorrow.

I did realize that I forgot to add the breadcrumbs and tomato soup to the burger part of the pie.. hope it doesn't make too much of a difference.. ugh, oh well.  I'll eat it regardless.  I'm not sure if Siehara will, but there are other things for her to eat if she won't.

Hi Liz,

     After yesterday's support meeting at Barix I went to Super Fresh to pick up some food for the week.  This AM, after church, I traveled to Trader Joe's to get the fixings for my healthy trail mix.  So far for meals this week I have - string cheese, carrot sticks, apples, chicken, dried apricots, ricotta, blueberries, eggplant parm, veggie lasagna, Special K Protein Plus cereal, Dream Fields pasta, and oatmeal.  That should be a good variety for me.  I also will be heading back to Zumba because I have missed it the past 2 weeks due to the holidays.  Happy New Year Liz.  Glad that Mia is back to sleeping.  Take care.
