Recipe: Mushroom Barley Asparagus Risotto
Made this today as one of the vegetarian components of today's feast... everyone loved it including the non-vegetarians! It's a keeper... and a very versatile base for tons of experimenting with ingredients and spices...

Rice is a funny thing... some people can, some can't. But risotto can be made with pretty much any whole grain. Barley is really high in protein and fiber and contains some ingredients that stabilize blood sugar really well, so it's something that I've come to appreciate. Never had it as a kid or young adult, only discovered it within the last 5 - 6 years and I have to say that I like it.
This recipe feeds a TON of people - filled a lasagna pan. next time, i will make a half recipe or less!
