Cuban Roast Chicken

Ingredients:

 

Serves 8



4 lb whole chicken, cut into 8 pieces


1/4 cup dry sherry


4 whole cloves of garlic


3 tablespoons fresh lemon juice


3 tablespoons fresh lime juice

2 tablespoons virgin olive oil

2 tablespoons Mrs. Dash Caribbean Blend

1 teaspoon chili powder

1 teaspoon ground cumin

1 teaspoon pepper

1 teaspoon salt

 

Cooking Instructions:

 

Cut off tips from wings. Remove skin from all pieces. You can find Mrs. Dash Caribbean Blend in the spice section of your store or look for Durkee's.

In a small bowl combine all ingredients and marinate overnight. Place chicken pieces in a crockpot, cover and cook on LOW until tender, about 4-6 hours depending on your crockpot.

Tip: Can also be put into the oven at 375 F and roasted for 45-60 minutes.
