Cheese & Spinach Stuffed Chicken

Ingredients:

 

Makes 4 servings


2 8-oz boneless chicken breasts


2 oz shredded mozzarella


1/4 cup ricotta cheese


1/2 cup frozen spinach, defrosted


1 tablespoon grated parmesan cheese


1 beaten egg white


1 tablespoon minced garlic


1 teaspoon white pepper


1 teaspoon onion powder

1 teaspoon salt

 

Cooking Instructions:

 

Here's a favorite "good enough for company" chicken dish. An added bonus is the nutritional punch of spinach.


Preheat oven to 350 F. Cut chicken in half for 4 oz portions. Pound out until 1/4" thick. Sprinkle evenly with salt, pepper and onion powder. Mix cheeses, spinach and egg white, set aside.


Place 1/4 of cheese mixture at one end of chicken breast and roll up, tucking in sides. Place seam side down on baking sheet treated with cooking spray or nonstick Silpat liner. Spray tops of chicken with nonstick spray or Misto sprayer. Bake for 45-60 minutes or until golden and cheese begins to ooze. Remove from heat, let sit for 5 minutes and serve!



Tip: For stress free entertaining, make this 24 hours ahead and hold in the fridge. Bake 20 minutes longer.
