Ingredients:
Serves 4
1 lb ground turkey
1/2 medium onion, chopped
1 large red bell pepper, chopped
2 tablespoons chopped parsley or cilantro
2 cloves garlic, minced
1 tablespoon olive oil
1 teaspoon chili powder
1/2 teaspoon each salt & pepper
Cooking Instructions:
A quick one pan meal. Make a double batch and freeze extras for another day. Also good as the base for quick soup (just add a can of broth).
Heat oil in a large nonstick skillet on medium heat. Add onion, bell pepper, garlic and chili powder. Cook 5 minutes.
Add ground turkey, broth, pepper and salt. Stir to mix, cover and cook 6-8 minutes or until turkey is cooked through. Stir in fresh chopped parsley or cilantro.
Serve alone or over Miracle Noodle angel hair pasta.
