Ingredients:
1 cup canned pumpkin
3/4 cup light cream
1 large egg, lightly beaten
2 tablespoons Davinci Gingerbread Sugar Free Syrup
1/2 teaspoon orange extract
1/4 teaspoon ground cinnamon
1 teaspoon grated fresh ginger OR 1/2 teaspoon ground ginger
pinch of salt
Cooking Instructions: Preheat oven to 350 F. Coat six 4-oz custard cups with cooking spray. Set on a sturdy baking sheet.
In a medium bowl whisk together pumpkin, cream, egg, gingerbread syrup, orange extract, ginger, cinnamon and a dash of salt.
Pour into the custard cups.
Bake for 30 to 35 minutes or until a knife inserted in the center of a pudding comes out clean. Serve warm or chilled. Garnish with 1 teaspoon light whipped topping if desired. Also serve unmolded on a small plate and drizzle with 1/2 teaspoon gingerbread syrup.
