Tired Tuesday Roll Call
Good morning all - I think this weather has everybody dragging butt this morning! I know I could have stayed in bed snuggled under the covers for a few more hours but sadly duty (and a paycheck) were calling my name, so I got up and got to work.
Nothing special on my agenda today - other than a lot of e-filing - its mindless and fills the day.
Threw together italian chicken & potatoes in the crockpot this morning so that'll be done when we get home. My nephew is painting the laundry room today and the Phillies and NCIS are on tonight - gonna be a good day!

Spray crockpot with Pam. Put chicken on the bottom. Sprinkle with 1 TBS italian seasoning and 1 TBS parmasan cheese - cut potatoes into chunks and lay on top - sprinkle with one more TBS each of seasoning and cheese; pour 1/2 cup italian dressing over entire mix. Cook on low 5-6 hours.
I've made this before and it comes out very tender and juicy. I added a little more to my recipe this morning because I had HUGE boneless chicken breasts - I cut up about 7 or 8 small new potatoes (leave the skins on) and probably close to 1 cup of italian dressing.

I won't be able to make this today...my chicken is drumsticks. Kids favorite! They call it "chicken on the bone."

Have you ever tried to cook ground beef recipes in the crock pot without precooking the beef? Why can you crockpot every meat under the sun except ground beef? Recipes always call for you to cook it on the stove first.

Drumsticks would probably cook way too fast and the meat would fall right off the bone - besides, kids love holding them and eating with their fingers - oh heck, my husband loves them too and he's certainly not a kid!! I get Food Network magazine and the one chef said for thanksgiving he gets a turkey breast and extra drumsticks because so many people want them - I think that's going to be on my table this year!
You probably have to pre-cook the ground beef so you can drain the grease from it - otherwise everything in the crockpot would be too greasy? I get very lean ground beef from a local butcher but even that has some drippings on it.
Most of the dishes I make in the crockpot either have chicken or pork because I find those two things are still difficult for me to digest and pass thru my pouch - usually in the crockpot they are very tender and moist and go down much easier than if I bake them. Baking tends to dry both of those meats out. But I did make my spaghetti sauce in the crockpot last week and my husband raved about it - probably because its slow-cooked all day and all those flavors got thru it - same for my chili Sunday - that's much better if it sits and slow cooks all day.

My Tuesday isn't tired, because I got tons of rest last night, after falling asleep before 9 pm. Today's plan is to make an AA meeting tonight, as it has been over a week since I've gone to one, and my thinking is crazy.

Back to reality and work for me today after Den & I had a mini getaway in Lancaster for a show and away time. (yes we get lots of away time) We did some outlet shopping yesterday all for me hit up Adidas and QVC then I drove home showing Den my back road skills in Lancaster to get us home.
This morning I was already at the gym and now in work after work watch the restof Phillies game already have dinner made and weill spend at least a half hour doing some house chore of purging.
Life is amazing these days.....

I passed out before 9 last night too! I bought melatonin (per Lisa's suggestion/experience with it) because I haven't slept well since removing atenolol from my daily regimen. Well, I guess it works just to have it in the house, because I fell asleep before I even took it. Huh? who knew?
I know none of you know me personally and I'd LOVE to come to a picnic or such some day and I hate to diss my husband but, I've got to vent!
For the past 2 weeks I've made dinners each night only to have him fix himself something else. Whatever I made (which was not ME friendly, just normal family meals) he wasn't in the mood for it and made himself something else. Considering I'm home all day he drops little comments under his breath like "I better get to that laundry tonight" which is code for "why don't you do that laundry today" or "I'll have to defrost the freezer tonight" which is code for "why don't you do that today"...and on and on.
Well, he came home sick yesterday from work at noon. Slept until I left at 4:30 to run 3 hours of kid activities and errands. He had the nerve to call me and ask me what to make for dinner! I know that sounds like a stupid comment. But, any other time that I do dance runs, he NEVER offers to cook dinner and when he does, he boils water, cooks pasta and pours sauce over it. EVERY TIME! I said, "go back to bed, I'm bringing home subs for everyone else and I'll make my own dinner". I went to a friends house to pick up Alexis and she had homemade chicken noodle soup. I asked for a cup of it since Jim was sick.
Let me spell out one more detail. I spent 4 hours yesterday sorting out weeks of laundry and delivering every last folded sock to each persons room. I've spent the last 3 months going thru fall and winter clothes and purging and getting things to salvation army. I've cooked. I've cleaned. I've taken care of EVERYTHING except emptying the dishwasher which is a war I will wage DAILY! His only comment after seeing that all the laundry was put away was..."the floor needs swept, I'll do that later"....which was code for "why didn't you sweep up the floor?"
OK, so back to the soup. He sits down to his meal and his comment was "How does she do it?" meaning "WOW, she's amazing!!! she made homemade soup!" I could have kicked him in the zipper! I could jump thru flaming hoops with a vacuum cleaner in hand and it's no big deal!
I'm probably overreacting thanks to a shortage of my meds...but, I'm seriously tweaked right now!
I'm done. I'm going to go do nothing today and feel my own amazingness!
