looking for a dessert

i have pumpkin that I cooked off and I would like to use it.  Does anybody have a recipe for a dessert that I could make to eat. I will be going on three weeks out since surgery. I am so hungry for a dessert.

also can we eat Vegan desserts?

Pumpkin custard with splenda and add unflavored protein powder.

GNC has it for close to 10 bucks...

But, I would make a cheesecake out of it without the crust-

1 block of reduce fat cream cheese

1 cup of pumpkin

apple pie spice to taste

sugar sub of some kind to taste

1 tub of sugar free cool whip

Beat the room temp cream cheese and pumpkin.  Then stir in the sugar sub and spices, and then gently fold in the cool whip.  Sit in fridge for about an hour. 

Or dish out into 1/2 cup containers for snacks to keep in the fridge or freezer.

Pumpkin is truly wonderful stuff!  So many things you can do with it even early out... pumpkin soup, pumpkin ice cream, pumpkin fluff pudding, spiced pumpkin flan... tons of good dessert recipes at bariatriceating.com: bariatriceating.com/BEhealthnutrition/nosugardessertsrecipes .php

Just keep in mind that "Splenda for baking" has sugar in it, so if you're going to bake something, use maltitol or diabetisweet.  Maltitol is available online from netrition.com (nature sweet granulated or powdered, brown or white and sensato crystals or powdered) and they have flat-rate shipping.  I'm in doylestown and get my orders from them the next day even though i get "regular" delivery.

WLS folks can follow a vegan lifestyle.  ... just keep in mind that you'll need to watch sugar and fats, so you may need to do some substitutions in the recipe.  Vegan doesn't HAVE to equal WLS-friendly.

Pumpkin Mousse - simlar to the cheesecake just keave out the cream cheese.
Gemtly fold pumpkin into 1 tub of SF cool whip. add a dash of pumpkin pie spice to taste.

ok, well now I'll have to make some!  I have pumpkin in the cabinet so I just need the sf cool whip.  Yummy!  I just love this time of year!!
