Low Carb KFC Coleslaw & BBQ Chicken

Copycat KFC ColeslawLow Carb KFC Sweet Coleslaw
Serves 8

16 oz bag coleslaw mix


1/2 cup Miracle Whip Lite


15+ Equal sweetener packets


2 tablespoons finely diced onion


2 tablespoons vegetable oil


1 tablespoon vinegar


1/4 teaspoon salt

In a large mixing bowl combine the coleslaw mix and onion.  In a medium bowl whisk together the Miracle Whip, oil, vinegar and salt.   Whisk in the sweetener packets and start tasting after 15 packets.  Continue adding 3-5 more packets until desired sweetness.   Pour dressing over the coleslaw mixture and toss to coat thoroughly.  Chill 2 hours or overnight before serving.

Kimkins BBQ Chicken Easy Grilled BBQ Chicken

Serves 8

8 large chicken drumsticks, skin removed


8 tablespoons Kimkins Low Carb BBQ Sauce (below)


salt & pepper to taste

Prepare an outdoor charcoal or tabletop grill to MEDIUM heat and coat grill with cooking spray.  Sprinkle chicken on all sides with salt and pepper.  Add chicken to the grill and turn a quarter turn about every 3 minutes until all 4 sides of the drumstick are grilled.

Start brushing with BBQ sauce half way through so the sauce doesn’t burn.  Keep turning chicken until cooked through and juices run clear.  Brush again with sauce before serving.

Kimkins Low Carb BBQ Sauce

Makes 40 tablespoons (2 1/2 cups)

12 oz Diet Coke or Dr. Pepper  (Splenda sweetened)


6 oz can tomato paste


2 thin slices bacon, cooked crisp & crumbled


1 small onion, finely chopped


2 cloves garlic, finely minced


4 tablespoons Heinz 1 Carb Ketchup


3 packets Splenda


3 tablespoons mustard


1 tablespoon Worcestershire sauce


1 teaspoon Liquid Smoke


1/8 teaspoon ground cloves

Add onion, garlic, bacon & ketchup in a Magic Bullet and hit HIGH for 20-30 seconds. The finely minced onion & garlic make a big difference in the taste compared to chopping with a knife.  Mix all ingredients in a medium saucepan and cook on low for about 30 minutes. Let cool then add Splenda. Store tightly covered in the fridge.
