crunchie chickpeas snack

I was looking for crunchie snack that was good for me... esp snack wise at work... some jerk keeps taking my cheese sticks... grrr... and this looks very awesome... got some chickpeas at the store today and going to make it now...

I did my on version of it... chickpeas and white northern beans... salt, pepper, garlic, and cajin... Pam and a little olive oil... the white beans will pop open and become extra crunchie!!

i don't make these, but buy dried edamame (twice as much protein per 1/4 cup than chick peas).  I buy them at the amish market but Seapoint also makes them and can be found in many organic/natural sections of grocery stores.

I buy the lightly salted and the wasabe and then I make a 1/2 and 1/2 mix so its not so hot.  I eat 1/4 cup almost ever day.  High protein, high fiber . . . great snack.

I'm thinking of making these again... then making my own "honey roasted" peanuts to make a sweet and spicy mix.  I think I will mess around with that next weekend... just need to find honey flavoring

I have made these quite a few times and do find them yummy.  I haven't figured out how to make them stay crunchy after the first day, though.  They seem to get soggy once you try to store them.

I have them stored on top of paper towel... they are still crunchie... but i am sure just tossing them back in the oven for a few mins will do it too...

Love these but not very good to make too many in advance. They get soft after about 24 hours and reheating them too much will make them hard.

However, very yummy and great to snack on!
