EZ Marinated Ranch Chicken

Ingredients:
Serves 4
2 8-oz boneless chicken breasts, no skin
1 1-oz package Hidden Valley Light Ranch dressing mix
2 tablespoons olive oil
1 tablespoon red wine vinegar
salt & pepper to taste
Combine dressing mix, oil and vinegar in a large Ziploc baggie. Add chicken and seal baggie (squeeze out all air). Massage the baggie to coat chicken evenly. Marinate at room temperature for 1 hour or refrigerate overnight if possible.
Preheat oven or tabletop grill to broil/grill. Remove chicken from bag and discard marinade. Broil 10-15 minutes or until cooked through and no longer pink inside.
Tip: If marinating overnight bring to room temperature before grilling so chicken cooks evenly.
