Cheeseburger Chowder

Ingredients:
Serves 6 ( If you make it serve 8 you can cut back on the fat, but the other numbers will reduce also)
1 lb 95% extra lean ground beef
8 oz shredded low fat sharp cheddar cheese
3 14-oz cans beef broth
1 small onion, chopped fine
1 cup canned petite dice tomatoes
1 celery stalk, chopped thin
1 cup sliced mushrooms
1 carrot, sliced thin
3 cloves garlic, minced fine
1 jalapeno pepper, minced fine
1 1/2 teaspoons ground poultry seasoning
1/2 teaspoon each garlic powder, salt & pepper
Brown ground beef in a stockpot over high heat to caramelize, drain well.
Add onion and garlic, cook 4 minutes until translucent. Add bell pepper, carrots, jalapeno, mushrooms, tomatoes & spices, cook 5 minutes.
Add beef broth, stirring gently. Cook 5-10 minutes, add cheese, stirring until melted. Check for seasoning, ladle into bows, garnish if desired and serve!
Tip: To make a hearty "meal" soup, add 1 cup shredded lettuce to each bowl before adding soup. The heat of the soup wilts the lettuce a little, but leaves a nice crunchy texture and delicious taste! Try it -- you'll love it!
