Cinnamon Kissed Chicken

Ingredients:

Serves 4

1 lb boneless chicken breast, no skin
1/2 cup red wine vinegar
1 tablespoon granulated Brown Sugar Twin
1 teaspoon fresh orange zest
1/2 teaspoon ground cinnamon

Cooking Instructions:

Cube the chicken breast and sprinkle lightly with salt and pepper.

In a large nonstick skillet mix the cinnamon, brown sugar substitute, orange zest and red wine vinegar together.

Add the chicken pieces and cook over medium heat for 3-4 minutes. Turn the pieces over and cook an additional 2-3 minutes or until chicken is done.

This sounds yummy Nan...I will have to try it and it is not real complicated.

I have done a similar recipe for moroccan chicken - replace the vinegar with 1 cup chunky tomato sauce and replace the orange zest for 1/2 tsp saffron - simmer fthe chicken for at least 15 min in the sauce - take out chicken - cut it up and let the sauce reduce a bit (~ 15 min)  yummy..
