Piccata Chicken Tenders

Ingredients:

Serves 4

4 4-oz chicken breast tenders, trimmed
1 tablespoon olive oil
1 clove garlic, minced
1/4 cup onion, diced
1/4 cup dry white wine
1/4 cup fresh lemon juice
1/4 cup chicken broth
2 tablespoons capers, rinsed
2 tablespoons fresh parsley

Cooking Instructions:

Season chicken with salt and pepper.

Heat oil in a large nonstick skillet over medium high heat. Add chicken tenders and coo****il barely golden on one side; 2-3 minutes. Turn over and cook 2 minutes. Remove from skillet and set aside.

Add onion to the skillet and coo****il soft and translucent; about 3 minutes. Add garlic; cook 1 minute, then deglaze the pan with wine, scraping up any browned bits for flavor.

Cook 2 minutes then add broth and capers. Cook 2 minutes and add lemon juice. Return chicken and coo****il done, turning frequently, about 3-4 minutes.

Transfer chicken to a serving platter and pour sauce over top. Garnish with parsley and serve!
