Baked Zucchini Fries & Roasted Pepper Dip

Ingredients:

Serves 6

3 medium zucchini, cut lengthwise into 2" long & 1/4" thick pieces
4 egg whites, beaten until foamy
1 cup dry grated parmesan cheese
1/2 teaspoon onion powder
1/2 teaspoon paprika
1/4 teaspoon pepper

Dip (makes 16 tablespoons)
3 oz feta cheese
1/2 red bell pepper, seeded, roasted & chopped
1/4 cup light sour cream
2 tablespoons water
2 teaspoons fresh lemon juice
1/2 teaspoon minced garlic
2 tablespoons olive oil
2 tablespoons finely chopped fresh basil
1/2 teaspoon salt
1/4 teaspoon pepper

Cooking Instructions:

Preheat oven to 425 F. Treat large baking sheet with cooking spray.

In a medium bowl mix together parmesan cheese, paprika, salt & pepper. In another medium bowl whisk egg whites until frothy.

Add zucchini pieces to egg whites. Toss to coat each piece completely. Remove zucchini pieces 1 at a time with a fork and dip in parmesan mixture. Coat zucchini with cheese and place on baking sheet. Spray zucchini with cooking spray.

Bake 18-20 minutes or until zucchini is tender and lightly browned. Remove and serve hot with feta dip if desired.

Dip

Add feta cheese, sour cream, lemon juice, garlic, salt pepper and water to blender or Magic Bullet. Puree until smooth. Add olive oil, basil and roasted red pepper. Puree until smooth. Cover and chill sauce for 1 hour or more before serving.
