Baked Artichoke Gratin:

Ingredients:

Serves 8

2 9-oz pkg frozen artichoke hearts, defrosted
4 stalks celery, thinly sliced
4 cloves garlic, minced fine
3 tablespoon minced onion
1 tablespoon minced fresh herb (optional)
4 tablespoons grated Parmesan cheese, diviced
3 tablespoons light cream
2 tablespoon melted diet margarine
2 teaspoons Italian seasoning, crushed
1 teaspoon onion powder
1/2 teaspoon each salt & pepper

Cooking Instructions:

Artichokes baked gratin-style are creamy and delicious. Using frozen hearts makes this a breeze to prepare. Turn it into a main dish by adding chicken, crab, mushrooms and/or broccoli.

Preheat the oven to 375 F. Treat an 8x8" baking dish with cooking spray.

Mix cream and 1 tablespoon parmesan in a large bowl. Slice artichoke hearts lengthwise into discs. Add to the cream mixture bowl with fresh herb and toss to coat.

Arrange artichokes in baking dish. Sprinkle celery, garlic, onion powder, Italian seasoning, pepper and salt over all.

In a small bowl mix 3 tablespoons parmesan cheese, minced onion and margarine to form a crumbly mixture. Set aside.

Bake 20 minutes and mix all the veggies. Top with parmesan mixture and bake 10 minutes or until golden. A perfect side dish for grilled chicken or fish so enjoy!
