Ham & Zucchini Panini

Ingredients:

Serves 2

1 zucchini (courgette)
2 1-oz slices low fat mozzarella
2 oz extra lean ham, sliced very thin
1 tablespoon Kraft Light Done Right Zesty Italian dressing
salt and pepper to taste

Cooking Instructions:

Another very simple, but fun recipe. Experiment with your own flavors, always paying attention to calories and carbs!

Trim zucchini ends and carefully cut into 8 lengthwise slices. Brush all sides of zucchini strips with salad dressing. Sprinkle with salt & pepper.

Build the "panini" by placing a half slice of cheese on a zucchini slice, then .5 oz ham (fold), sprinkle a bit more pepper, then another half slice of cheese. Top with zucchini slice. Finish remaining "panini".

This works best with a George Foreman Grill type grill, but any nonstick skillet can work. Carefully place panini on the grill (diagonally gives the most interesting grill marks).

Grill 5-7 minutes, then test for doneness and if cheese has melted. Remove, let sit for 2-3 minutes, cut diagonally and serve. These make ideal appetizers also if cut into bite size pieces.
