Ginger Orange Tofu Triangles:

Ingredients:
Serves 8
1 lb extra firm tofu
1 cup strong Crystal Light Orange Sunrise
1/3 cup soy sauce
1/4 cup rice vinegar
4 teaspoons dark sesame oil
1 green onion, sliced thin diagonally
1/4 cup chopped fresh cilantro
3 cloves garlic, minced
1 tablespoon grated raw ginger
1/4 teaspoon red pepper flakes
Super flavorful tofu appetizer or main dish. Prepare the night before so tofu can marinate overnight.
Slice tofu into 4 slices, then diagonally to make 8 triangles. Lay tofu on several paper towels, cover with more paper towels and lay a heavy skillet on top. Let sit 30 minutes to drain all excess water.
In a large Ziploc baggie add Crystal Light, sesame oil, vinegar, cilantro, soy sauce, garlic, ginger and pepper flakes. Add tofu slices, squeeze out excess air and seal baggie. Marinate at least 30 minutes or overnight in the fridge.
Preheat oven to 350 F. Treat 9x13" baking pan generously with cooking spray. Arrange tofu in pan and pour marinade over all. Bake 40-45 minutes (without turning****il tofu is golden and marinade is absorbed.
Garnish with sliced green onions and serve hot!
