Recipe: Zucchini lasagna
Made this last night - caution - it makes a full lasagna pan's worth.
Very tasty, surprisingly "light" and easily adaptable to whatever blend of veggies you like. Given the picky eaters I had over last night (no onions, no mushrooms, i hate cooked carrots...), this one was "just" 2 types of squash. But you could easily toss whatever you like in the layers.
I also really liked the Gimme Lean vegetarian sausage crumbles - VERY tasty and nice texture in it.
The fresh whole wheat pasta noodles i used were Wegman's Italian Classic Lasagna Sheets (in the dairy case). They're about 5" wide and high in fiber and protein - tasted great! www.wegmans.com/webapp/wcs/stores/servlet/ProductDisplay
