MOnday's Menu - Whatcha Eating???
Ok All so what are you eating today?? We were having a great turn out of posts a while ago and it dropped off. Everyone is eating - be accountable!!!
B: fage and a peach
S: cheddar cheese and a few crackers
L: roast beef and provolone on a flat out wrap
S:sugar free brownie
D: eating at MOm's so some kind of meat and veggie
S: chocolate pudding

I haven't posted in a while to the menu thread, so what the heck...
B: Matrix vanilla with frozen strawberries & mango
S: whole wheat crackers w/ pb (probably won't eat -- think I'll have as a pre-gym snack instead)
L: Ham & Jarlsberg roll-ups
S: cheese stick
D: Turbot with vegetables
S: ricotta with SF syrup

When you make your chicken salad with the greek yogurt can you tell or taste that it is greek yogurt?
Gene loves chicken salad and I've been thinking of trying it with Greek yogurt, but he gags on the taste of it, I can only get him to eat Greek Yogurt when he mixes the yogurt with cocoa powder and a couple packages of splenda and blueberries to kill the taste.

To me, greek yogurt tastes a lot like sour cream and that's how i typically use it in recipes. To make my chicken salad dressing, I mix 1 part smart balance omega3 "mayo" with 2 parts plain greek yogurt. Add garlic powder, onion powder, salt, pepper, and some chopped (or dried, if you must) cilantro. The combination doesn't taste "yogurty" and is very low in fat (has good omega-3 fat) and high in protein.
I dice the chicken, then finely dice some celery and whatever else I feel like tossing in - usually scallions, sometimes some cashews or dried cranberries or sesame seeds... In short - however you like your chicken salad!
