JELLO Chocolate Mousse Torte
  • 37 NILLA Wafers, divided
  • 4 (1 ounce) squares BAKER'S Semi-Sweet Chocolate, divided
  • 2 (3.9 ounce) packages JELL-O Chocolate Instant Pudding
  • 2 cups cold milk (lactaid is fine, don’t use soy or almond it won’t set)
  • 1 (8 ounce) tub COOL WHIP Whipped Topping, thawed, divided
  • 1 (8 ounce) package PHILADELPHIA Cream Cheese, softened
  • 1/4 cup sugar
  • 2 tablespoons cold milk
Stand 16 wafers around inside edge of 9-inch round pan lined with plastic wrap. Melt 3 chocolate squares as directed on package. Beat pudding mixes and 2 cups milk with whisk 2 min. Add melted chocolate; mix well. Stir in 1 cup COOL WHIP; pour into prepared pan. Beat cream cheese, sugar and remaining milk with mixer until well blended. Stir in 1 cup of the remaining COOL WHIP; spread over pudding. Top with remaining wafers. Refrigerate 3 hours. Meanwhile, shave remaining chocolate square into curls. Invert torte onto plate. Remove pan and plastic wrap. Top torte with remaining COOL WHIP, berries and chocolate curls.  
Lemon Poppy Seed Muffins ·        3/4 c. cooked bulgur wheat ·        1 ½ flour ·        1 egg ·        1 c. skim milk (soy or almond milk would be fine too) ·        2 tbsp. lemon juice (about 1/2 a lemon) ·        zest of one lemon ·        ¼ cup oil ·        1 1/2 tbsp. maltitol ·        4 tsp. baking powder ·        1/2 tsp. salt ·        1 tbsp. poppy seeds   Heat oven to 400 degrees F. Beat egg slightly, stir in milk, canola oil, lemon juice, and zest. In a separate bowl, mix dry ingredients together. Stir wet mixture and bulgar wheat into dry ingredients. Do not over mix. Fill lined or greased muffin cups 2/3 full, approximately 1/4 c. of batter. Bake 15-20 minutes  
Fish / Chicken Packets (recipe is for 1 but can be adjusted easily) 1 chicken breast or fish fillet per person 8-10 thin slices of zucchini 1 teaspoon margarine pinch of Italian seasoning dash of garlic powder salt & pepper parchment paper or aluminum foil   cut off piece of parchment twice as big as your fish fillet, put down zucchini slices (or try any other veggies! I’ve done it with broccoli chopped, cauliflower chopped), top with fish and remaining ingredients. Seal up all edges of paper and put on a sheet pan. Bake at 350 degrees approximately 13-18 minutes depending on the thickness of the fish _______________________________________________________________ Chicken Meatball 1 pound ground chicken ½ teaspoon garlic powder salt & pepper ¼ cup grated parmesan cheese 1 egg ¼ cup bread crumbs 1 Tablespoon sour cream (or greek yogurt) Mix all ingredients together (add more breadcrumbs if necessary), form into balls. Pan fry in olive oil, simmer in tomato sauce or bake in the oven Stuffed Tomatoes   ½ cup bulgar wheat – cooked 2 cloves minced garlic Olive oil Salt & pepper 6-8 leaves fresh basil chopped 1 sprig fresh thyme - chopped 2 Tablespoons parmesan cheese ¼ cup mozzarella cheese   Mix all ingredients together – add just enough olive oil to make mixture moist. Stuff into halved and seeded tomatoes. Broil for approximately 3-5 minutes until top is golden brown
