I see that you just had surgery, so I would say wait on this recipe until you are further out. At least until you are in to the solid food stage.
Cheeseburger Pie Recipe
1lb lean ground beef( i used laura's lean beef which is 7% fat and can be found at most supermarkets
1/2 cup chopped green peppers
1/2 cup chopped onion
6 whole wheat ritz crackers crushed
1/4 cup Walden Farms SF BBQ Sauce
1/4 cup spicy mustard
use other seasonings as options such as garlic, pepper, oregano
1/8 cup of taco seasoning
2 cups shredded sharp cheddar( or whatever cheese you like)
1 egg
1/4 cup milk
Brown beef and drain through strainer. Put beef back in pan then add peppers and onions. Let cook for several minutes if you are using frozen veggies until they thaw in pan. Add crackers, BBQ Sauce, mustard, seasonings (as desired), taco seasoning. Mix well and let cook for about two minutes.
Topping
mix together in separate small bowl
2 cups shredded cheese
1 egg
1/4 cup milk
I add a couple of squirts of mustard and some more taco seasoning to this mixture.
Once the beef mixture is cooked and mixed well put in a round baking dish ( a pie plate would be fine) Flatten out mixture in dish then add cheese mixture on top and make sure to cover all of the beef mixture. Bake in the oven at 350 degrees uncovered for about 30 minutes until cheese is melted and browned on the edges.
Make a salad and it's a meal!!

Had a blast last night out with Den and a few friends at Curran's the band was great and it was a beautiful night to be on the patio.
TOday was up and out early had breakfast with my bestie and her daughter then we did some food shopping for on sale items. Going to veg today since we have a concert tonight to see Trace Adkins and Toby Keith with our summer concert crew.
Tomorrow we have a BBQ with friends.
