Recipe: FF Cream of Broccoli soup (vegetarian too!)
Experimented with this over the weekend with some leftover broccoli - YUM!!! A surprisingly different take on cream of broccoli soup. Vegetarian (uses a great vegetarian bouillon that tastes like beef stock) and fat free and really low calorie! It's a little saltier than you might expect, so if you don't like salt, decrease the amount of the bouillon...

Oh Good. Then my work here is done. :-)
The soup, btw, was even better today, I think (I made it last night so I'd have lunches for a couple of days).
And the texture of the ice cream held up well until tonight - wasn't icy or too hard - just perfect! I'm thinking I still like splenda a bit better for non-cooked ice cream batter, though... the maltitol works well for cooked ones, but the texture is still a tiny bit noticeable in non-cooked ones (I'm a snob when it comes to ice cream I think - haha).
Enjoy!
