Spicy Ginger Shrimp Stir Fry:

Serves 8
2 lbs medium shrimp, peeled & deveined
1 large bell pepper, cut into thin strips
16 Chinese pea pods, strings removed
16 button mushrooms, quartered
4 green onions, sliced thin diagonally
3 garlic cloves, minced
2 tablespoons grated fresh ginger
3 tablespoons soy sauce
4 teaspoons olive oil
1 pkt Splenda or Equal sweetener
1/2 teaspoon white pepper
1/4 teaspoon red pepper flakes
Cooking Instructions:
In a large bowl whisk together 2 teaspoons oil, soy sauce, Splenda and garlic in a large bowl. Add shrimp and toss to coat evenly; set aside.
Treat a large nonstick skillet or steel wok with cooking spray and heat over high heat. Add shrimp and coo****il pink, 2 minutes. Transfer to a plate.
Heat remaining oil in the same skillet over high heat. Add ginger and cook 30 seconds.
Add mushrooms, green onions, bell pepper, snow peas, white pepper and pepper flakes. Coo****il veggies are tender crisp, about 4 minutes.
Stir in shrimp, remaining soy sauce and toss to combine. Serve hot & enjoy!
