Hellooo folks!

Another (i hope) pretty calm day today - work, then another 2 hours of online training, then helping Katie try to get another school loan so she can finish her last year (yikes!), no pressure at all.

Steffi, I hope PATS goes well for you today - please let me know the outcome, ok?  (wow - like there's any chance you won't - sheesh).

I'm feeling really "off-balance" with my eating right now and i'm not sure why.  Stress? maybe... I know hormones were playing a role last week... but I can't seem to get the evenings under control.  I'll post separately about this because there are a lot of "musings" going on in my head.  Sigh.

Have a great day - the heat's back, so stay hydrated!

Hi All,

I'm late to this here party, but wanted to jump on board and say hello. . .  things are busy as per usual, work has me well occupied, so that is my day, my evening, well that remains to be seen based on the weather, but I have tomatoes to pick, so we'll just see if the weather cooperates. . .

You all have a wonderful day,

Laureen

Afternoon everyone!

Working from 3pm till 1am after an evening last night and morning of some recipe experimentation.  Last night I made black bean brownies.  I was completely a skeptic, but they are freakin' fantastic.  I used a box mix of SF brownie mix (Pillsbury, Betty Crocker, beats me...), black beans (about half a can because that box makes a smaller pan size) and a half cup of water.  Added some SF chocolate chips and a SF cream cheesey concoction (cream cheese, splenda and some vanilla) and kinda swirled it through.  This is the end result....

Then for lunch I made a whole grain pasta, grape tomato, basil and fresh mozzarella dish that was quite delightful as well.  Thanks for the recipe Pam!

Absolutely awesome dish.  Great taste and super easy!  So besides being a cooking fool, nothing going on with me.  Working till 1am and then home.  Hope everyone has a wonderful day!

YUM!! And I am so proud! lol

The SF brownie mix that I found was pillsbury.

Oh and did you steal Basil from my garden too?

Thanks Liz!  There were no onions to chop though, so I couldn't showcase all I have learned from you.

The basil was from the grocery store.  If I knew I was making it on Monday, I would have or if you lived closer, I also would have....lol.
