** Wacky Wednesday Roll Call **

I am being totally immature and racing Pam to posting roll call today.  I know that  I have a few moments until it is officially Wednesday - but I thought I would throw her off!  Hee Hee Hee....

Had several amazing phone calls with really great friends today.  One that got me off the PA turnpike...AGAIN...without incident and one tonight who is just the best listener - even if her phone hangs up on me several times...WHATEVER! :)

Today will certainly be wacky for me - as will the rest of the week.  My little 22 year old brother is here with me - he is struggling with a recent break-up and I hope I am helping in SOME way - maybe by just being here for him to have a refuge is something.  He is heading out to see his cousin tomorrow and back to Boston on Thursday.  I hate when the people I love are hurting....it really breaks my heart!

Anyway - we will hang out for breakfast - still haven't gone to the market to get any food sinceI have been home - so we shall see how breakfast looks, then I have my pre-admission tests at the Plastic Surgeon's office at 11:15 - this is getting REAL!  OMG!  Can't believe I am doing this.  I was totally looking at my belly this mornign thinking - "I can't wait to NOT look at you anymore!"

Tomorrow afternoon I will probably take a nap and then take the girls to the mall.  Should be an expensive trip!  LOVE that they are home.....**eye roll**

I hope your Wednesday is NOT nearly as wacky as mine!

While someone was being immature...I was working and not thinking at all about roll call.  In fact, I even answered some more posts prior to even LOOKING at your roll call post.  LMAO.  It was cute banter back and forth.  Of course...as soon as I got online here and on my phone..freaking patients started walking in.  The nerve of them...demanding undivided attention and what not!

Anyway going to the gym right after work for spin class....soooooo excited.  Haven't done a spin class since last week and the one I did was not one of my favorite instructors...but today is!!!  After that will probably do some core/ab work.

After that it's off to a grocery store - probably wegmans.  I should probably stay OUT of wegmans as there is nothing there that I need specifically....any grocery store would do...I just feel like going...which will mean impulse buys.  But soooo good.

Once home I plan on making stuffed cabbage and home made pierogies.  I've had recent conversations about cabbage and ethnic food of all things and that has me craving the damn stuff.  Sigh.  Brian's already annoyed I'll be doing it..A) he doesn't eat the stuffed cabbage (it's not like I won't make him something else, PS) and B) he hates the way it smells.  I told him to plan on going out for the day, then, cause I'm making it!  Can't wait.

I'll probably make a double batch of the stuffed cabbage and a triple batch of the pierogies...to keep in the freezer for whenever.  Plus my inlaws might come over on Saturday, and they like stuffed cabbage too so it'll be an easy dinner to just reheat for them, yet totally impress them.

Once those are done it'll definately be time for a siesta....night off tonight so a nap is in order and then an early bedtime, I'm sure!

Have fun!

Hey Pammy,
I was thinking about you tonight.  I went to the ER for help with my pain, which was through the roof.  They were so busy, I kicked myself for not going to the hospital that has a Fast Track department.  They gave me Prednisone on an empty pouch, with no crackers to ease the digestion.  Argh.  Then, I had to go potty, and when I walked into the restroom, someone had puked all over the toilet and it had not been cleaned up.

Anywho, I made stuffed cabbage over the weekend, with fresh cabbage from Mom's boyfriend's garden.  It's a family favorite.  I never learned to make pierogies, because Mom moved away from her mother, who was from Poland, when she was 10 years old.  Could you send me the recipe, as I would love to make them homemade.  The frozen ones just do not cut it.

Hugs,
Trish

Hey Trish,

I made pierogie's for the first time a few years ago for my mom's mother's day gift.  This is the recipe that I used, but I changed it a bit.

http://www.foodnetwork.com/recipes/aaron-mccargo,-jr./smoked -ham-stuffed-perogies-recipe/index.html

The changes I made were:  No peas (who puts peas in freaking pierogies anyway?) and no ham, and I used cheddar instead of the Gruyere cheese, as that is a family favorite, potato and cheddar in our house.  I basically just used the recipe for the dough....the filling and the cooking I just did "as normal"

Once they are made, I boil them in some salted water and then transfer to a skillet with some butter and olive oil and sauteed onions.  My family used to use bacon fat, with the bacon of course, butter, and onions.  On occassion I will use some turkey bacon now

When I made them for mom, I made the pierogies and then froze them and gave them to her that way so she could cook them up fresh.

They were pretty easy to make - except the dough was quite elastic and I found difficult to roll out to the desired thickness - it kept "snapping" back into place.  I'm gonna let it rest a bit more this time to see if that helps.

Have fun!

Hey Steffi,
I wanted to ask you what insurance you have that is paying for the surgery.   Is it from our school district benefits?

I hope you have a good visit with your Little Bro.  Enjoy your visits.  I miss my brothers terribly.

Wednesday has me crashing in the apartment, as I have not been doing well with the pain lately.  I have to call Aria's billing office, because they screwed up some payments I made.  I also want to find out about their wellness center.

Have a good day, as I know mine will probably be as wacky as yours.

Hugs,
Trish
