Summer squash sauteed with a bunch of onions, a little bit of bacon, and a tiny bit of egg beaters, tossed with spicy grilled chicken breast strips. YUM! *also good with a little romano cheese or some goat cheese sprinkled on top
It's such a nice time of year for fresh veggies! How about some grilled shrimp skewers with peppers and onions and squash and mangoes or pineapple? Or grilled portabello mushrooms stuffed with crab or shrimp or diced chicken or ground pork? Grilled pineapple with lowfat cheddar and/or cream cheese?
Or go mexican - quesadillas with grilled strip steak (or chicken), onions, peppers, mangos, guacamole and greek yogurt... and a nice spicy salsa?

One of my favorites is "zucchini canoes"... you hollow out the zucchini, then mix the innards with various things and stuff them back in to bake them. You can also do it "en casserole" without stuffing them back into the zucchini shells if you want. Freezes beautifully...
Zucchini innards, chopped, diced, or shredded (your preference - i prefer diced)
Lowfat swiss cheese or provolone cheese, shredded
Lowfat bacon, chopped (you can use the 50% less fat bacon bits if you want)
Eggs or egg beaters
whole wheat bread crumbs (panko if you can find them)
chopped onion
minced garlic
salt
pepper
Combine all ingredients in a big bowl and mix to a consistency like a firm meatloaf. Stuff into shells or casserole dish, packing firmly. Top with a little of the shredded cheese and breadcrumbs and bake at 350 until done (will cook a lot faster in the zucchini shells than in the casserole). If cooking in the zucchini shells, put about 1/4" of water in the bottom of the cooking dish so the shells steam and don't burn to the dish.
I've deliberately not included quantities here - you can adjust to your heart's content based on the amount of zucchini you have and your taste preferences. You're using just enough egg and bread crumbs in the mixture to have it hold together nicely.
