One of my favorites is "zucchini canoes"... you hollow out the zucchini, then mix the innards with various things and stuff them back in to bake them.  You can also do it "en casserole" without stuffing them back into the zucchini shells if you want.  Freezes beautifully...

Zucchini innards, chopped, diced, or shredded (your preference - i prefer diced)
Lowfat swiss cheese or provolone cheese, shredded
Lowfat bacon, chopped (you can use the 50% less fat bacon bits if you want)
Eggs or egg beaters
whole wheat bread crumbs (panko if you can find them)
chopped onion
minced garlic
salt
pepper

Combine all ingredients in a big bowl and mix to a consistency like a firm meatloaf.  Stuff into shells or casserole dish, packing firmly.  Top with a little of the shredded cheese and breadcrumbs and bake at 350 until done (will cook a lot faster in the zucchini shells than in the casserole).  If cooking in the zucchini shells, put about 1/4" of water in the bottom of the cooking dish so the shells steam and don't burn to the dish.

I've deliberately not included quantities here - you can adjust to your heart's content based on the amount of zucchini you have and your taste preferences.  You're using just enough egg and bread crumbs in the mixture to have it hold together nicely.

Good Morning..........

I am home and ready for bed. Worked 2 jobs yesterday and I am beat! I don't have a day off until July 30th and I am soooooooooooo looking forward to it!

So for me, sleeping, making dinner, relaxing and back to work again. What an exciting life! LOL

Today's the day!!  We are up and getting ready. 

I'm about to hit the shower and then take Siehara to get her hair braided. 

We are leaving to head north to camp around noon.  So far, I am going alone, but one of my friends is trying to find someone to pick up her kids from day camp so she can come with me.  I did stop to get an audio book from the library to keep me company on the way home if needed.

Tonight, Bron is going to come down after he gets off work.  He'll stay over and leave sometime tomorrow.  I am back to work tomorrow, so there really isn't much planned other than just spending time together.

Good morning all - Trish, Nicole had a great suggestion - a family fast - I like it - and it would probably do you a world of good! Nicole, sorry to hear about the morning mishaps - maybe we all should have stayed in bed today!!

I'm up and at work but feel like I should have stayed in bed as well - stuck a bottle of wine in the freezer last night thinking I'd have a glass, went to bed and forgot about it - not good! Frozen wine will break the seal and push the damn cork right out of the bottle. Thank god it didn't pu**** the whole way out so I didn't have a huge mess to clean up. Then we had to detour around our elbow to get to our thumb this morning because of a water main break on the road outside of our development - at least we had water this morning, tho, so that was good.

So I'm at work - drinking another nasty sf van iced coffee - 2nd day in a row that Micky D's has screwed it up - not sure what they're doing but its nasty - trying to force it down but I might have to resort to hot coffee...blech. Since RNY I really don't care for it but I do need that caffeine jolt in the AM.

Other than that not much else going on - hope everyone's day gets better! Kathy

Good morning Steffi and PA!!!

Today has me working until 3:30 and then going home to be dad.  I m currently struggling to organize a huge project for my boss.  Should keep me busy for a couple of days.....yay!  I have 8 more days till my surgery!  I know...... right!  Getting even more excited.  A weird thing has been happening to me lately and I figured why not share it with all of you.  It seems to me that when I eat I am getting fuller quicker.  If I try to eat the "normal" amount for me I get that uncomfortable stuffed feeling.  I think its totally psychosomatic and that my mind is telling/preparing me for what I think it might feel like after surgery when I'm allowed to eat again.  Does that make sense?  Anyway, I think my mind is fast forwarding to post surgery mode and my body is still in the present....I told you it was weird!!!!  Maybe its just anxiety manifesting itself in this weird way.  Who knows....lol.  Ok let the psychoanalyzing begin.

It COULD be anxiety... could be your mind prepping itself for post surg... and it could be that your pre-surg modification of your eating habits are already causing your stomach to shrink.  My guess is it's a little of all 3.  You've been so diligent in the mental preparation that you've already started a lot of the adjustments that most people don't go through until after surgery, so it's not surprising that you're seeing a change in your appetite level as you address the eating behaviors that you have.

(((((HUGS))))) to all of you who are stressed out today, seems to be a rough one for a lot of you.

Today I am sitting in my empty store from 11 -2 waiting for RCN to come install my phone and computer line.  Even for a business there is waiting involved.....

19 days till surgery....Swede, I can relate to what you are saying, going through a lot of weird emotions at this point.

Good Morning All. Well I guess I was the odd-ball, we had a great day yesterday. Amelia rolled from her tummy to her back for the first time! Rachel and my Mom were here to see it too. Today we are headed to my Grandmother's to hang out by the pool.

Nothing new for today. It's going to thunder storm today, so, with a house full of little ones afraid of storms, I'm in for a noisy day.

Looks like we'll have a movie day. We'll watch UP again or Nanny McPhee. Just found out there's a Nanny McPhee 2 coming out. You should have seen my kids. They spun around in their seats at the theatre to see how excited I was. Nanny McPhee is one of my all time favorites!! We saw Despicable Me last night. It was really cute. Better than I expected.

Now, for today again. Probably just a day of cleaning house and doing laundry. Mop that dang kitchen floor for the umpteenth time this week. (white was not my best idea for a kitchen floor color.) I've already cleaned up spilled dog food, puke (my daily puker), and yogurt/baby food that got knocked over. and it's only 9:20 am. SHEESH!

I think I'll need an energy burst. I got the Crystal Light packets that are tinier than the others but have 125 mg caffeine in them. WOW! Those are little powerhouses. I drink one of those and LOOK OUT!!! I'm a cleaning machine. (dit657 - I found them in the checkout lane in a cute little cardboard purse pocket thing. Maybe you should look into them so McD's doesn't put you into a sugar coma. They're really good!)
