Good Morning All! I am just about 2 years out and still eating a bit heavy today to make up for the blood draw yesterday

B: toasted sandwich crisp & fage yogurt
S: oatmeal custard (I am probably going to make another batch tonight, I'll write down the recipe!)
L: leftover eggplant with cheese and a bit of noodles
S: cheese
D: not too sure - maybe salmon and broccoli
S: s/f chocolate chip cookie - thank god they are almost gone! lol

Good morning!  I am almost 2.5 years out and here is the plan.

In the car...I was sooo hungry:  protein bar
B:  cheereos and fiber one cereal with skim
S:  Cheese stick and apple
L:  Turkey meatballs with veggies in sauce, cucumber and tomato
S:  sf pudding
D:  Chicken, zuchini, cheese, sourcream and Kasha casserole
S:  Cheese, triscuts
E:  hopefully karate if the roads are OK and they don't close

Ive been pretty good lately with my eating. I will be 5 months out tomorrow

Hey everybody - I'm almost 1 year out and here's my plan:

L:  Breakfast casserole
S:  Protein bar or nuts
D:  Ham, green beans and potatoes
S:  ???

I have sucked at exercise lately - not sure what my problem is but I have just had no motivation to do anything and that's not good....I will shoot for the bike again tonight. Wish me luck.

How do you make the breakfast casserole?

Instead of complaining that the rosebush has thorns, be happy that the thorn bush has roses.

Its probably not the most WLS friendly casserole around, but you don't each much so once in a while I think its okay - plus there's lots of eggs, milk and cheese for protein. Here is the full recipe - I halve it when its just DH and I.

4 cups cubed firm white bread (italian or french)
10 eggs
4 cups of milk (any kind - I use 1%)
2 cups lo-fat or part-skim shredded cheddar cheese
Tsp Salt and Tsp Pepper
12 slices bacon cooked crisp and crumbled

Grease large baking dish with Pam. Put bread cubes on bottom of pan and sprinkle half the cheese over the bread. Blend together milk, eggs, seasoning and pour over bread and cheese. Sprinkle crumbled bacon and cheese over the top - cover and refrigerate overnight. Bake the next day at 325 for one hour (or until firm in the middle) uncovered.

You can also substitute turkey bacon - I like to dice my bacon down and then fry it so it has a chance to drain and cool before putting it on the casserole.

This also freezes very well if you cut it into serving size portions and put it in baggies - then take it out and nuke it. I've never tried making it with a whole wheat bread but there's not much 'firm' whole wheat bread out there and I don't think regular bread would cut it because thats' what soaks up the egg mixture and makes it a casserole. It is delicious and I like the fact you make it up a day ahead of time and then just pop it in the oven. I make it for breakfast, brunch and even dinner.

I make something very similar but use sausage instead of bacon. It is our traditional christmas morning breakfast.

Sausage sounds good, too - I've used leftover ham and diced it up in there - that works. I love the convenience of it and its one of our holiday traditions as well - plus it feeds a lot of people!

I didn't eat everything I brought to work last night.  And I was starving when I got home.  So right after shoveling I had a bowl of the hi lo cereal.

I just had some ricotta cheese and will be lying down in a minute or two for my nap.  When I get up:

Greek Yogurt w/ berries
Depending on how early I get up, I may also have a few cheesesticks (2 to be exact) if I need to eat before dinner time
Filet Mignon (aren't I fancy?) w/ mashed cauliflower

I'm not sure what my evening snack will be after dinner.  Probably will make a sandwhich crisp all toasty in the oven with some deli ham and melted cheese that I can cut up into small pieces and munch on without to much guilt when Brian and I watch a movie....
