Good Morning! So here is the plan...

B: oatmeal custard
S: cheese stick
L: 1/2 sandwich on a bagel (not best choice I know but it is a treat!)
S: s/f l/f pudding
D: I've been horrible with planning this lately. Maybe salmon - that defrosts quickly
S: pudding or protein shake

So it seems that I did something stupid and pulled a muscle in my shoulder. I will continue to do my stretches for my back and hope that this darn wii fit shows up soon!

Hi there - here is my plan for the day...

B:  Sausage & Egg Buritto
S:  Banana
L:  Turkey & cheese on Arnold sandwich rounds (love those!); apple; dessert (sugar free - made an apple pie and a Splenda Eclair dessert for my bosses' birthday - so I'll have a little something)
S:  Nuts
D:  Fish; salad
S:  ???

E:  OK, I'll fess up now - I haven't done a lick of exercise these past few days. Last night I got home and got potatoes in the oven for baking, changed clothes, got the veggies ready to steam and the steaks out ready to broil. Then I began cutting up apples, fed the dog, made my apple pie, threw the steaks in the oven, then made the Eclair dessert - after cleaning up the mess in the kitchen and emptying the trash. I didn't sit down until almost 8:30 and was exhausted - plus its my TOM and that just drains me now...you know, I'll be 52 this year - time for this stinking thing to just GO AWAY!!

Other than that life is good!!

Top secret!! Not a chance! I got it off the Splenda recipe website and its really simple. I'll PM it to you since I don't have much luck cutting and pasting into this site. Don't make the mistake I made, tho - I didn't really 'read' the recipe before I went shopping so I bought graham cracker crumbs instead of graham crackers - duh - so I actually don't know how it turned out yet since we haven't sampled it!! We'll be testing it at lunchtime - I'll let you know how it goes, but considering how my day has been so far someone may end up wearing it if smart-aleck comments are made!!

I just blew off some steam a while ago in here and one of the guys put the little punching bag on my desk so I had something to hit - yes, its that bad -thank god I can laugh about it, tho!! And so can everyone else...hopefully!!

Splenda Éclair Dessert

 

Mix 1 box sugar free instant vanilla pudding according to package directions - whisk for 2 minutes with a wire whisk.

 

Mix in 1 tub cool whip free.

 

Layer an 8"x8" pan with low fat graham crackers, top with 1/2 the pudding cool whip mix, another layer of grahams, top with rest of pudding mix. Add another layer of grahams and top with a ½ cup of melted carob or sugar free chocolate chips mixed with 1 Tablespoon butter or margarine.

 

Refrigerate for 2 hours before serving.

The eclair dessert was a big hit, however, there is something I would do differently next time. The chocolate on top got rock hard, so I think I would melt that and put it on the first layer of graham crackers on the bottom, then do a layer of the pudding/cool whip, then graham crackers, etc. and maybe sprinkle graham cracker crumbs across the top. But it tasted decadent and it was all sugar free!! gotta love that, right?!

Thanks Kathy! I made this once and lost the recipe! I remember it now and it was a huge hit! I just drizzled the chocolate on top - I think that I used real chocolate chips because that's what I had.

Thanks again! I am going to make it tomorrow when I have company coming!

Here is my plan....

B:  high protein cereal, skim, greek yogurt with banana
S:  fruit
L:  organic greens, tomato and sprouts, 1/2 organic turkey, avacado, cucumber on 1 piece of Ezekiel bread
S:  handfull of wasabi peas
D:  Not sure...may go out while dress shopping...if not, chicken and veggies
S:  cheese

L:  Not sure as they are having a retirement luncheon for one of my friends, but I was assured there would be healthy choices to pick from.
