Corn Muffins of a different sort
I saw this on my yogurt today and it sounds great... and it was... Lorelei and I made them today... they are all gone... i ate one... she ate the rest...
1 cup yellow cornmeal
1 cup all-purpose flour
1/2 cup DiabetiSweet (they orginally said sugar lol)
1 tsp baking powder
1 tsp baking soda
2 large eggs (I used 3 for extra protein)
1 1/2 cup of Vanilla or Stawberry Dannon Light and Fit non fat yogurt
1/4 cup canola oil
1. preheat oven to 375
lightly grease 12 2" muffin tins
2. mix dry together in one bowl... in another bowl mix wet... then mix together
3. put mixture in muffin tins
bake in the middle of the oven for 20 mins of until a tester comes out clean
4. let them cool in the tin for 3 mins (yeah that didn't happen here...)
This made more than 12 for us... I have a 2 inch muffin pan lol... so you might end up with more... hehehe...
I tried to figure the protein on this... but that math started to hurt my head... so i gave up... but I think it ended up being about 5 grams to maybe 6... I bet you can even pull a little flour out for some protein powder to up it more...
Also if you have to add some extra calories to your kids diet like I have had to do because of Lore being sick... add 1/4 cup to a sippy full of milk and shake... not only does it become vanilla flavored but it yummy...
