A different kind of tuna salad

I was just sharing this with a friend in an email and decided to pass this on to you all too...

Fun new tuna salad sandwich

One can/pouch of tuna packed in water
1/4 cup of shredded carrots
1/4 cup of shredded salad greens (whatever you have on hand)
1/4 cup of shredded cheese (whatever you have on hand)
3 piece of bacon crumbled
enough light mayo to make moist (or fat free)

Dump everything into a bowl and stir together... eat on crackers or toast... depending on how much you want on a sandwich this can feed 3 adults or 6 toddlers in half sandwiches...

Sounds Great Shannon!!

If you aren't a mayo fan (like me) you can also use italian dressing, I prefer the good seasonings that you make yourself with balsamic vinegar and olive oil.

Thanks Liz - I was just going to ask, "What can be substituted for mayo?"  I like mayo but it is not a clean food.  I thought of the evoo but not the balsamic vinegar.  I saw some organic vegenaise at the market but wasn't so sure if I could stomach that... at least not yet.

LOL - yup.  I am all organic/no processed foods.  It is not easy and it takes a lot of planning but I am giving it a whirl.  Pretty much if I can't pronounce the ingredients listed on the package I would eat it. 

There was a huge discussion about it on the grad band board a few weeks ago and I started to wean things out of my diet.  Started with Splenda - switched to Stevia.  Next, gave up all artificial sweetened crystal light, kool-aid, puddings, jello, etc.  Took all the to school and the teachers just grabbed it up.  I have to tell you I felt a little guilty about giving the chemically altered food to other teachers - but I am the one changing it up not them.

It is really expensive to eat all organic so I haven't gone 100%.  I do eat organic fruits and veggies - berries & spinach.  Produce with a skin that I peel off I don't do organic.  I eat all organic diary - love organic milk!  I am just switching over to organic, no hormones,  free range, free graze, all vegetarian feed chicken and beef.  I am also experimenting with fish. 

I have to tell you Pam, I feel great.  I do not have the afternoon sluggish feeling I have had in the past.  I have learned that I do not like bean sprouts, egg beaters and corn tortillas.  I have learned that I love avocados, olives, spinach and hummus.

This is my second week of slowly making the change and I have lost 4 pounds.  I am not getting on the scale until after tom but I can't wait to see what it says. 

Last night, however, I did have a small slip.  I brought something into the house with sugar which sent me into a tailspin.  I raided the kitchen only to find nothing - because I took it all to school.  Lesson learned.  To keep myself occupied I posted all over the board last night - lol!

Good for you, Beth!  I personally would not be able to make those changes to the extent you already have - but the fact you are feeling better and losing weight is a testament to all you have been doing.

My cousins have switched to organic meats and things like eggs.  They said specifically with the eggs, when eating them "plain" meaning cooked, not in a cake or something like that...you can absolutely taste the difference.  Because of the price and they have three boys (talk about feeding frenzy) they use regular eggs in recipies, but use the organic when having something like breakfast.

I'm glad you are feeling so good!

Thanks sounds good.  I love tuna.  I also mix it with chick peas or beans with some onion, garlic, and italian dressing.  I never tried bacon.
