Update- Re: Best recipe...
Hello everyone, heres hoping all your Christmases were merry , your Hannukas were happy etc etc etc. I just wanted to thank everyone for their input about offering up WLS friendly desserts. I ended up making both the Pumpkin-Ricotta Mousse and also the S/F Truffles. Both turned out great. I had to improvise a bit on the truffles b/c all I could find at the market was unsweetened baking chocolate. So i melted that and added Splenda, it changed the consistency so to compensate I doubled the cream cheese, I wasnt that worried b/c I used low fat and fat free . I went ahead and coated em with the white chocolate and chocolate pudding powder.
These were the end to a great meal that I made myself , which believe it or not was made of recipes that I used from 2 Post-WLS cookbooks I recently picked up. I brined and roasted a 20lb turkey . I did make a stuffing , got it at WilliamsSonoma for $3 each box on clearance, but I didnt eat it. Ok I am a liar I did pick a lil taste or two to make sure it was ok but no plate servings , lol. It was a cranberry-pecan stuffing and i added onions celery and mushrooms to it, so opposed to my Moms heart attack stuffing( re: bacon , sausage and drippings to start) it was relatively healthy. We had Sweet Potato AuGratin that I lifted from the book. A greenbean casserole also a WLS cookbook recipe. Roasted asparagus . I got lazy and threw out some store bought mashed potatoes for those that wanted them. As far as gravy went , Heinz's FF gravy was good enough. Most people didnt know that what they were eating was specifically made to be low-non fat and or Low-no sugar. Now I have enough leftovers to last until Valentines Day!!!

PAtrick - so glad to hear that the meal went over well! SOunds like you did a terriffic job! Better watch out - family/friends are going to want you to cook for them all the time now!

You want a turkey sammich? I got tons of leftovers. My dad is diabetic and had 5 heart bypasses done in April , so I have been trying to introduce him and mom to some different options to what they are used to. They are the most frustrating people when it comes to getting them out of their comfortzone and what they know/ are used to. ugh
