"Liz's SF truffles"
OK...so I'm not sure where Liz got the recipie for the truffles...so I am naming them after her...but OMG are they fantastic...I don't think she had posted them yet...and I have made two batches for a holiday party on Saturday and HAD to share.
Ingredients
8 ounces cream cheese, room temp
8 ounces SF Chocolate Chips (yes, they make them)
Beat cream cheese till light and fluffy
Melt Chocolate Chips
Blend together until well combined (I used a hand held mixer for this part as well as beating the cream cheese originally)
Place in fridge until set, at least 30 minutes, but I found it better to handle when it sat in there for a few hours.
Roll mixture into bite size balls.
Roll into topping of choice....I used crushed peanuts on some, flaked coconut on some, and a mixture of cocoa powder and splenda I had put in the foodprocessor on some. Other ideas would be to roll them in more melted chocolate (I would freeze or at least re chill the balls before doing this), sf pudding powder...whatever floats your boat.
Put back in fridge and chill until serving time.
**Note: As you work with them, the mixture does become warm and soft...so be prepared to have chocolately hands, work quickly, or work in small batches. The outside does need to get a little soft so the toppings stick depending on your choice.**

I'm probably not the best one to answer this...but from what I understand it is some sort of dehydrated peanut butter that you mix up what you need and people rave about it. I know it was featured at the philly event sponsored by OH, but I wasn't there.
Somebody else have a better explanation?
