I am not much of a cook...can do some basic stuff, but not real creative.   That being said. I LOVE LOVE LOVE pumkin and was wondering if this sounds good to anyone before I attempt to make it.   Pumkin from a can (no sugar added), roccotta cheese and splenda...maybe some all spice or cinnamon.   sound like a good idea or do  you think the roccota would make it yucky.....or...do you thing the Fage yogurt would be better????

Hey, what the heck, try it, worse that could happen is you find it to be yucky. . .

Do you get the Barbara Thompson Newsletter, here is a recipe that was for this month, maybe this will give you an idea, if you have it already, sorry, but it does sound good:

Recipe:
Pumpkin Dip
This is a great dip for any Halloween get together. Pumpkin Dip 2 cups pumpkin puree, fresh or canned
1 cup brown sugar substitute*
1 tsp ground cinnamon
1/2 tsp ground ginger
1/2 tsp ground nutmeg
1 pkg low fat cream cheese Mix the first 5 ingredients together.  Allow the cream cheese to soften and mix all ingredients together until smooth and creamy. Refrigerate at least four hours or overnight to allow the spices to blend. Serve with crackers, celery or carrot sticks. *Brown sugar substitute is sold in supermarkets where the artificial sweetener is sold.

My Mantra is that I do not determine my success by the number hanging in my closet, nor will I let the scale determine that success either. . .  It is through trial and error I will continue to grow and succeed. . .  Laureen

Heather,

Almost every night norm and I have been having 1 can of pumpkin, and 2 boxes s/f vanilla pudding, w/ 1 c. skim milk, and pumpkin pie spice blended together...   chill for about 5 minutes, and it's the most amazing thing you've ever tasted!!!
